CHEESY FIESTA CORN CASSEROLE



You can easily prepare a creamy caramel corn casserole in about 30 minutes by combining fresh, colorful peppers with everyday kitchen gadgets for a comforting casserole that will please any crowd.

When it's time for you to need a great dish to share, come in handy for the next Creamy Fiesta Corn Casserole recipe. It's full of fresh peppers that you can find in any supermarket all year round. I used a variety of sweet peppers but they are equally delicious with canned green peppers or fresh peppers. Jalapeno peppers add a nice kick, too! But don't worry, it's not too hot. There's plenty of sour cream or if you want - an alternative to Greek yogurt - to balance out the peppers.



* Ingredients:

° 2 c. Cheddar cheese
° 1 c. shredded monterey jack cheese
° 2 t. All-purpose flour
° 1/2 tsp. black pepper
° 3/4 c. milk
° 4 oz. Soft cream cheese
° 2/3 c. Sliced ​​green onion
° 1 tsp. hot sauce
° 2 cans (15.25 oz) whole kernel corn, drained
° 2 cans (15.25 ounces) whole grain corn or Vista corn with red and green peppers, drained
° 1/2 T. to 1 T. pickled jalapeno, sliced ​​{about 4 to 6 slices}
° fresh coriander, chopped, for garnish {optional}

* Directions:

Mix shredded cheese, flour, and pepper together in a small bowl. Sit aside.
Combine milk, cream cheese, 1/3 cup green onions, hot sauce, and chopped jalapenos in a 9" x 13" baking dish. Add the corn and grated cheese mixture. Stir until well blended.
Cover and bake at 350 degrees for 30 minutes. Remove the lid, sprinkle with the remaining 1/3 cup of the green onions, and bake for another 5 minutes.
