BEST POTATO PANCAKES πŸ˜‹ – It’s A Keeper



Potato pie is my favorite!This recipe is made with diced potatoes mixed with flour and eggs to make the perfect crunchy pancake!

Whether you are of Polish, Irish or German descent, you will likely have had a version of this at some point! It's a delicious change from standard mashed potatoes (although you can make mashed potato pancakes with leftovers), and it goes with just about anything!

* Ingredients:

° 4 cups cold mashed potatoes
° 5 slices of bacon
° 1/2 teaspoon onion powder
° 1/2 teaspoon salt
° 1/2 teaspoon black pepper
° 2 eggs, beaten well
° 1/2 c cheddar cheese

* Methods :

Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until browned and crispy, about 10 minutes.
Remove the bacon strips and set aside, letting the bacon broth into the skillet.Place mashed potatoes, eggs, onion powder, salt and black pepper in a bowl.
Add shredded bacon and cheddar cheese.
Shape blend into 8 pieces.Heat the broth and bacon over medium heat and saute the pancakes in it until they are browned on all sides, about 4 minutes on each side.
